Ingredients

  • 180 g Spud Lite potatoes, cut into small pieces
  • 1 teaspoon extra-virgin olive oil
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • Salt and pepper, to taste
  • 100 g extra-lean beef mince
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt and pepper, to taste
  • 2 cups shredded lettuce
  • ½ medium tomato, diced
  • ¼ small red onion, thinly sliced
  • 2–3 pickle slices, chopped
  • 25 g reduced-fat cheddar cheese, grated
  • 1 tablespoon light mayonnaise
  • ½ tablespoon Mingle tomato sauce
  • ½ teaspoon French mustard
  • ½ teaspoon pickle juice
  • Pinch of paprika
  • Pinch of garlic powder
  • Pinch of onion powder

Method

    Preheat the oven or air fryer to 200°C.

    Place the potatoes in a bowl. Add the olive oil, smoked paprika, garlic powder, salt and pepper, then toss until evenly coated.

    Arrange the potatoes in a single layer on a lined baking tray.

    Bake for 25–30 minutes, turning halfway, until golden and crisp. Alternatively, air fry for 18–22 minutes, shaking the basket halfway through.

    While the potatoes are cooking, heat a non-stick frying pan over medium-high heat.

    Add the beef mince and season with the garlic powder, onion powder, salt and pepper.

    Cook for 5–7 minutes, breaking the mince apart with a wooden spoon, until browned and cooked through.

    To prepare the burger sauce, combine the mayonnaise, tomato sauce, French mustard, pickle juice, paprika, garlic powder and onion powder in a small bowl.

    Add the shredded lettuce to a serving bowl.

    Top with the tomato, red onion, pickles, cooked beef mince, grated cheese and crispy potatoes.

    Drizzle over the burger sauce and serve.
