BBQ Chicken Flatbread Pizza
This high-protein flatbread pizza combines smoky shredded chicken, barbecue sauce, melted mozzarella and fresh vegetables. It is an easy homemade alternative when you are craving pizza without spending hours in the kitchen.

Ingredients
- 1 Simpson's Pantry Low Carb Garlic & Herb + Protein wrap
- 150 g chicken breast
- 1 teaspoon extra-virgin olive oil
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- Salt and pepper, to taste
- ¼ cup Mingle BBQ Sauce
- 30 g reduced-fat mozzarella, grated
- ¼ red capsicum, thinly sliced
- ¼ red onion, thinly sliced
- Handful of rocket
- Chilli flakes, to taste (optional)
Method

Preheat the oven to 200°C conventional or 180°C fan-forced. Line a baking tray with baking paper.

Season the chicken with the smoked paprika, garlic powder, salt and pepper.

Heat the olive oil in a non-stick frying pan over medium heat.

Cook the chicken for approximately 5–7 minutes on each side, or until cooked through.

Transfer the chicken to a plate and allow it to rest for a few minutes.

Shred the chicken using two forks.

Reserve 1 tablespoon of the BBQ sauce for the pizza base. Mix the remaining sauce through the shredded chicken.

Place the wrap on the prepared baking tray and spread the reserved BBQ sauce evenly over the base.

Top with the BBQ chicken, capsicum, red onion and mozzarella.

Bake for 8–10 minutes, or until the cheese has melted and the edges are lightly crisp.

Top with rocket and optional chilli flakes before serving.
